Our Grass fed bovine products are 100% undefatted. Our process keeps the organs as close to nature as possible. The bovine is harvested fresh, allowed to drain, ground and then freeze dried. That said, we have chosen to leave the nourishment of the fat in tact as many of the vitamins, minerals and co-factors work in synergy with one another.
